Ingredients

8 oz elbow macaroni

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

2 cups milk

1/4 cup grated Parmesan cheese

2 tablespoons unsalted butter

1/4 cup all-purpose flour

1 tablespoon Italian seasoning

Salt and pepper to taste

1 cup assorted fruits (e.g., strawberries, kiwi, blueberries, peaches), diced

1/4 cup strawberry or berry jam (optional, for a drizzle)

Fresh mint leaves for garnish (optional)

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add elbow macaroni and cook until al dente, according to package directions. Drain and set aside.

Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Add the flour, stirring constantly for about 2 minutes to create a roux. Gradually whisk in the milk, stirring until the mixture thickens (approximately 5-7 minutes).

Add Cheeses: Lower the heat to medium-low. Stir in the cream cheese, cheddar cheese, and mozzarella cheese until melted and creamy. Season with Italian seasoning, salt, and pepper.

Combine Pasta and Sauce: Fold the cooked macaroni into the cheese sauce until well coated.

Top with Fruits: Gently fold in your assorted diced fruits. Make sure to reserve some for topping.

Bake for Texture: Preheat your oven to 350°F (175°C). Transfer the Mac and Cheese mixture to a baking dish, and sprinkle the grated Parmesan cheese evenly on top. Bake for about 15-20 minutes or until the top is golden and bubbly.

Finish and Serve: Remove from the oven, allow it to cool slightly, and then drizzle with strawberry or berry jam if desired. Top with the reserved diced fruits and garnish with fresh mint leaves.

Enjoy: Serve warm as a unique, colorful twist on traditional mac and cheese!
