2 cups granulated sugar

4 large eggs

For the Cheesecake Layer:

16 ounces cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

For the Frosting:

1 cup unsalted butter, softened

4 cups powdered sugar

2 teaspoons vanilla extract

2-4 tablespoons heavy cream

½ cup rainbow sprinkles (for decoration)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.

    Make the Funfetti Cake Batter:

      - In a large bowl, combine the flour, sugar, baking powder, and salt. Whisk until well blended.

        - Add the softened butter and mix until the mixture resembles coarse crumbs.

          - Pour in the milk, eggs, and vanilla extract. Mix on medium speed for about 2 minutes until fully combined and smooth.

            - Gently fold in the rainbow sprinkles.

              Bake the Funfetti Cakes:

                - Divide the batter evenly among the three prepared pans.

                  - Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                    - Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

                      Prepare the Cheesecake Layer:

                        - Reduce the oven temperature to 325°F (160°C). Grease a 9-inch springform pan.

                          - In a large mixing bowl, beat the cream cheese until smooth and creamy.

                            - Add in the sugar and vanilla extract, mixing until well combined.

                              - Add the eggs one at a time, mixing after each addition until just combined.

                                - Finally, mix in the sour cream until smooth.

                                  - Pour the cheesecake filling into the prepared springform pan. Bake for about 50-60 minutes or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool for about 1 hour before removing it from the springform pan. Refrigerate for at least 4 hours or until completely chilled.

                                    Make the Frosting:

                                      - In a large bowl, beat the softened butter until creamy. Gradually add in the powdered sugar, mixing well.

                                        - Add the vanilla extract and 2 tablespoons of heavy cream and beat until smooth. If the frosting is too thick, add more heavy cream, a tablespoon at a time until you reach your desired consistency.

                                          Assemble the Cake:

                                              - Place the cheesecake layer on top of the frosted cake layer and frost the top of the cheesecake.
