1 pound fresh green beans, trimmed

3 tablespoons unsalted butter

3 cloves garlic, minced

1/2 cup sliced almonds

Zest of 1 lemon

Juice of 1/2 lemon

Salt, to taste

Black pepper, to taste

1 tablespoon olive oil (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Green Beans: Bring a large pot of salted water to a boil. Add the green beans and blanch for about 3-4 minutes until they are tender-crisp and bright green.

    Shock the Beans: Drain the beans and immediately plunge them into a bowl of ice water to stop the cooking process. Once cool, drain again and set aside.

      Toast the Almonds: In a large skillet, heat 1 tablespoon of butter over medium heat. Add the sliced almonds and toast for 3-4 minutes, stirring frequently, until they are golden brown. Be careful not to burn them. Remove the almonds from the skillet and set aside.

        Make the Garlic Butter: In the same skillet, add the remaining 2 tablespoons of butter (and olive oil if using). Below medium heat, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it brown.

          Combine: Add the blanched green beans and lemon zest to the skillet, tossing them in the garlic butter for 2-3 minutes until heated through. Squeeze the lemon juice over the green beans and season with salt and black pepper to taste.

            Finish with Almonds: Remove the skillet from heat and gently stir in the toasted almonds.

              Serve: Transfer to a serving dish and garnish with freshly chopped parsley. Serve warm.
