Garlic Butter Grilled Mushrooms

1 lb (450g) large portobello mushrooms, cleaned and stems removed

4 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 teaspoon fresh thyme leaves

1 teaspoon sea salt

½ teaspoon black pepper

Juice of 1 lemon

Olive oil for brushing

Prepare the Marinade: In a small saucepan, melt the butter over low heat. Once melted, add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned. Remove from heat and stir in the parsley, thyme, sea salt, black pepper, and lemon juice. Set aside to cool slightly.

    Marinate the Mushrooms: Place the portobello mushrooms in a large bowl. Brush them with olive oil on both sides. Pour the garlic butter mixture over the mushrooms, ensuring they are well coated. Allow them to marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator for a deeper flavor.

      Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If using a grill pan, heat it over medium heat on the stovetop.

        Grill the Mushrooms: Once the grill is hot, place the marinated mushrooms, gill side down, on the grill. Cook for about 5-7 minutes on the first side, then flip and cook for an additional 5-7 minutes. You want them to be tender with a nice char and grill marks.

          Serve: Remove the mushrooms from the grill and let them rest for a couple of minutes. Drizzle any remaining garlic butter from the marinade over the top, and garnish with extra parsley if desired. Serve warm as a side dish or an appetizer.
