Ingredients

1 pound (450g) large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon lemon zest

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (plus extra for garnish)

8 slices of baguette or crusty bread, cut into 1/2-inch thick slices

Olive oil, for brushing

Optional: Grated Parmesan cheese, for topping

Instructions

Prepare the Shrimp: In a medium-sized bowl, combine the shrimp, minced garlic, lemon juice, lemon zest, red pepper flakes, salt, and pepper. Toss to coat the shrimp evenly and set aside to marinate for about 10 minutes.

Toast the Bread: Preheat your oven to 400°F (200°C). Place the slices of baguette on a baking sheet. Brush each slice with a little olive oil on both sides. Bake in the preheated oven for about 5-7 minutes, or until golden brown and crispy. Remove from the oven and set aside.

Cook the Shrimp: In a large skillet, melt the butter over medium heat. Add the marinated shrimp to the skillet in a single layer, cooking for about 2-3 minutes on one side until pink and opaque. Flip them over and add the chopped parsley. Cook for an additional 1-2 minutes, making sure not to overcook the shrimp. Remove from heat.

Assemble the Toast Bites: Top each toasted bread slice with a generous spoonful of the garlic butter shrimp mixture. If desired, sprinkle grated Parmesan cheese over the top for added flavor.

Garnish and Serve: Garnish with additional fresh parsley before serving. Serve warm and enjoy your scrumptious Garlic Butter Shrimp Toast Bites!
