Ingredients

1 lb beef sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

6 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

1 tablespoon olive oil

Fresh parsley, chopped, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions

Prepare the Steak: Start by patting the beef sirloin cubes dry with paper towels to ensure they sear properly. Season generously with salt and pepper on all sides.

Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Wait for the oil to shimmer before adding the steak bites.

Sear the Steak Bites: Add the beef cubes to the skillet in a single layer, ensuring not to overcrowd the pan (you may need to do this in batches). Sear the steak bites for about 2-3 minutes on each side until they develop a nice crust. Remove them from the pan and set aside.

Make the Garlic Butter: Lower the heat to medium. In the same skillet, add the butter, followed by the minced garlic, rosemary, and thyme. Stir constantly for about 1-2 minutes, until the garlic becomes fragrant but not burnt.

Combine and Toss: Return the seared steak bites to the skillet and toss them in the garlic butter until well-coated. Cook for an additional 1-2 minutes to heat through.

Garnish and Serve: Remove from heat, and if desired, sprinkle with freshly chopped parsley. Serve the garlic butter steak bites hot, with lemon wedges on the side for a zesty finish.
