Garlic Herb Roasted Potato Skins

4 medium russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried rosemary)

1 tablespoon fresh thyme, finely chopped (or 1 teaspoon dried thyme)

1 teaspoon sea salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional, for heat)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Preheat your Oven: Preheat your oven to 400°F (200°C).

    Prepare the Potatoes: Scrub the russet potatoes thoroughly under running water to remove any dirt. Pat them dry with a clean kitchen towel.

      Bake the Potatoes: Use a fork to prick several holes in each potato. Place the potatoes directly on the middle rack of the preheated oven and bake for about 45-60 minutes or until they are tender. You'll know they're ready when a fork easily goes through.

        Cool and Cut: Remove the potatoes from the oven and let them cool for about 10-15 minutes until they are manageable to handle. Once cool, cut each potato in half lengthwise.

          Scoop the Flesh: Gently scoop out the insides of each potato half, leaving about a ¼-inch border around the skin to ensure they stay sturdy. Save the scooped potato flesh for another recipe, like mashed potatoes or potato pancakes!

            Make the Garlic Herb Mixture: In a small bowl, combine olive oil, minced garlic, rosemary, thyme, sea salt, black pepper, and red pepper flakes (if using). Mix well.

              Brush the Potato Skins: Using a brush or spoon, generously coat the inside and outside of each potato skin with the garlic herb mixture.

                Roast the Skins: Arrange the potato skins cut-side up on a baking sheet. Roast in the oven for about 20-25 minutes until they are golden brown and crispy.
