Ingredients

1 pound large shrimp, peeled and deveined

4 cloves garlic, minced

Zest and juice of 2 lemons

¼ cup olive oil

2 tablespoons fresh parsley, chopped

1 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

8 wooden or metal skewers

Lemon wedges, for serving

Instructions

Prepare the Marinade: In a medium bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, chopped parsley, red pepper flakes (if using), salt, and black pepper. Whisk until well blended.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Toss to ensure all the shrimp are coated evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 1 hour for more intense flavor.

Soak the Skewers: If using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.

Skewer the Shrimp: Thread the marinated shrimp onto the skewers, making sure to leave a little space between each shrimp for even cooking.

Preheat the Grill: Preheat your grill (or grill pan) over medium-high heat. Lightly oil the grill grates to prevent sticking.

Grill the Skewers: Place the skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Be careful not to overcook them!

Serve: Remove the skewers from the grill and let them rest for a minute. Serve hot with lemon wedges and a sprinkle of fresh parsley for garnish.
