Garlic Parmesan Chicken Meatloaves

1 lb ground chicken

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 egg

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1/4 cup milk

1/3 cup marinara sauce (plus more for serving)

Olive oil spray (for greasing)

Instructions
 

Preheat the Oven: Set your oven to preheat at 375°F (190°C). Lightly grease a baking dish or a meatloaf pan with olive oil spray.

    Mix the Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped parsley, egg, Italian seasoning, salt, black pepper, and milk. Use your hands or a spoon to mix everything until just combined. Be careful not to overmix, as this can make the meatloaves tough.

      Form the Meatloaves: Divide the mixture into 4 equal portions and shape each into a small loaf (about the size of your palm). Make sure they are even in size for consistent cooking.

        Add Marinara Sauce: Place the meatloaves in the prepared baking dish. Spoon a tablespoon of marinara sauce on top of each meatloaf, spreading it slightly to cover the surface.

          Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the internal temperature reaches 165°F (74°C) and the top is golden and bubbly.

            Rest and Serve: Once cooked, remove from the oven and let the meatloaves rest for 5 minutes. This will help them stay juicy. Serve with extra marinara sauce on the side for dipping or drizzling.

              Garnish: Optionally, sprinkle additional chopped parsley or grated Parmesan cheese on top for an extra touch before serving.
