Ingredients

4 bone-in pork chops (1-inch thick)

1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

4 cloves garlic, minced

1 tablespoon fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 large eggs

¼ cup milk

½ cup all-purpose flour

Olive oil for cooking

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Coating: In one bowl, mix together the grated Parmesan cheese, breadcrumbs, minced garlic, parsley, oregano, salt, and black pepper. Set aside.

Prepare the Pork Chops: Pat the pork chops dry with paper towels. Season them lightly with salt and pepper on both sides.

        Dredge the Chops:

          - In a shallow dish, whisk together the eggs and milk.

            - In another shallow dish, place the flour.

              Bread the Chops:

                - Dredge each pork chop first in the flour, shaking off any excess.

                  - Next, dip them into the egg mixture, coating well.

                    - Finally, press each chop into the Parmesan breadcrumb mixture, ensuring a good coating on both sides.

Sear the Chops: In a large oven-safe skillet, heat about 2 tablespoons of olive oil over medium-high heat. Once hot, add the coated pork chops and sear for about 3-4 minutes on each side until golden brown.

Bake the Chops: Transfer the skillet with the seared pork chops to the preheated oven, and bake for 15-20 minutes or until the internal temperature reaches 145°F (63°C).

Rest and Serve: Remove the skillet from the oven, and let the pork chops rest for about 5 minutes before serving. This helps retain their juices!

Garnish: Optionally, sprinkle with additional parsley for garnish and serve with your choice of sides, such as roasted vegetables or mashed potatoes.
