Garlic Parmesan Roasted Carrots

1 pound carrots, peeled and cut into sticks or rounds

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon dried thyme (optional)

1/2 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: In a large bowl, combine the peeled and cut carrots with olive oil, minced garlic, salt, black pepper, and dried thyme (if using). Toss until the carrots are well-coated in the oil and seasoning.

      Spread on Baking Sheet: Transfer the carrots to the prepared baking sheet, spreading them out in a single layer to ensure even cooking.

        Roast the Carrots: Place the baking sheet in the preheated oven and roast the carrots for about 20-25 minutes, stirring halfway through. The carrots should be tender and caramelized at the edges when done.
