Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup granulated sugar

1/2 cup cold unsalted butter, cubed

3/4 cup buttermilk

1 cup fresh blueberries (or frozen, thawed and drained)

For the Butter Swim:

1/2 cup unsalted butter (1 stick)

1/4 cup granulated sugar

1/4 cup brown sugar

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

For the Glaze:

1 cup powdered sugar

2 tablespoons milk or cream

1 teaspoon vanilla extract

Fresh blueberries for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C).

Make the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar. Using a pastry cutter or your fingers, cut in the cold cubed butter until the mixture resembles coarse crumbs. Slowly add the buttermilk and stir until just combined. Gently fold in the blueberries, being careful not to crush them.

Prepare the Butter Swim: In a microwave-safe bowl, melt the 1/2 cup of butter in the microwave until fully melted but not bubbling. Stir in the granulated and brown sugars, and mix until well combined. Add the vanilla extract and almond extract, if using, stirring until smooth.

Assemble: Pour the melted butter mixture into a greased 9x13-inch baking dish. Spoon the biscuit dough over the melted butter, spreading it evenly but creating gaps for the butter to get through.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the biscuits are golden brown and cooked through.

Make the Glaze: While the biscuits are baking, prepare the glaze by whisking together the powdered sugar, milk (or cream), and vanilla extract in a small bowl until smooth. Adjust the thickness of the glaze by adding more milk or powdered sugar as needed.

Glaze the Biscuits: Once the biscuits are done baking, remove them from the oven and let them cool for about 5 minutes. Drizzle the glaze over the still-warm biscuits and garnish with fresh blueberries, if desired.

Serve: Cut into squares and serve warm. Enjoy the flaky, buttery goodness of your Blueberry Bliss Butter Swim Biscuits!
