Ingredients

For the Potato Hash:

4 medium russet potatoes, peeled and diced into small cubes

1 medium onion, finely chopped

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

Salt and pepper, to taste

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

For the Chicken Bites:

1 pound chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 cup all-purpose flour

1 tablespoon Cajun seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 cups vegetable oil (for frying)

Optional Toppings:

Sliced green onions

Hot sauce

Sour cream or ranch dressing

Instructions

Prepare the Chicken Bites:

Marinate the chicken pieces in buttermilk for at least 30 minutes (or up to overnight for extra tenderness).

      Coat the Chicken:

In a shallow bowl, mix the flour, Cajun seasoning, garlic powder, onion powder, salt, and pepper. Remove the chicken from the buttermilk and dredge each piece in the flour mixture, shaking off any excess.

          Fry the Chicken Bites:

In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot (about 350°F), carefully add the chicken pieces in batches, frying for 5-7 minutes or until golden brown and cooked through. Remove and drain on paper towels.

              Cook the Potato Hash:

While the chicken is frying, in a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.

                  Add Aromatics:

To the potatoes, add the chopped onion, red and green bell peppers, and garlic. Sprinkle in the Cajun seasoning, smoked paprika, salt, and pepper. Continue to cook for another 10-15 minutes, stirring occasionally, until the potatoes are crispy and golden brown.

                      Combine and Finish:

Once the potato hash is cooked, layer the fried chicken bites over the top. Use a spatula to gently mix them together if desired. Cook for an additional 2-3 minutes, allowing the flavors to meld together.

                          Serve:

Garnish with fresh parsley and any optional toppings such as sliced green onions, hot sauce, or sour cream. Serve hot and enjoy this hearty and flavorful dish!
