Golden Crispy Cauliflower Tacos

For the Cauliflower:

1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon cumin

½ teaspoon salt

½ teaspoon black pepper

1 cup cold sparkling water

Oil for frying (e.g., vegetable or canola oil)

For the Spicy Avocado Cream:

1 ripe avocado

1 tablespoon lime juice

1 tablespoon sour cream or plain yogurt

½ teaspoon garlic powder

¼ teaspoon cayenne pepper (adjust to taste)

Salt to taste

For the Tacos:

8 small corn or flour tortillas

1 cup shredded red cabbage

½ cup fresh cilantro, roughly chopped

Lime wedges, for serving

Instructions
 

Prepare the Cauliflower:

    - In a mixing bowl, combine the flour, garlic powder, smoked paprika, cumin, salt, and black pepper. Whisk together to combine.

      - Gradually add cold sparkling water to the dry ingredients, mixing until a smooth batter forms. It should be thick enough to coat the cauliflower but still pourable.

        Fry the Cauliflower:

          - In a large, deep skillet or frying pan, heat about 2 inches of oil over medium-high heat. To check if the oil is ready, drop a small amount of batter into the oil; if it sizzles, it’s ready.

            - Dip the cauliflower florets into the batter, coating them well before carefully lowering them into the hot oil. Fry in batches to avoid overcrowding.

              - Fry the cauliflower for about 5-7 minutes, or until they are golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain excess oil.

                Make the Spicy Avocado Cream:

                  - In a blender or food processor, combine the avocado, lime juice, sour cream (or yogurt), garlic powder, cayenne pepper, and salt. Blend until smooth and creamy. Adjust seasoning as necessary.

                    Assemble the Tacos:
