1 lb (450g) boneless, skinless chicken thighs

1 cup jasmine rice, rinsed and drained

1 medium onion, chopped

3 cloves garlic, minced

1-inch piece ginger, grated

2 teaspoons ground turmeric

1 teaspoon ground cumin

1 teaspoon paprika

4 cups low-sodium chicken broth

2 cups water

1 can (400ml) coconut milk

2 cups baby spinach (optional)

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, until translucent. Stir in the minced garlic and grated ginger, cooking for an additional 1-2 minutes until fragrant.

    Add Spices: Sprinkle in the ground turmeric, cumin, and paprika. Stir the spices into the onions for about a minute to release their flavors.

      Cook the Chicken: Add the chicken thighs to the pot and brown them for about 5 minutes on each side. This will enhance the flavor of the chicken.

        Incorporate Liquids: Pour in the chicken broth and water. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Allow the chicken to simmer for 20-25 minutes, or until cooked through.
