1.5 lbs boneless, skinless chicken thighs

3 tbsp olive oil

4 cloves garlic, minced

Juice of 1 lemon

1 tsp dried oregano

1 tsp ground cumin

1 tsp paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 medium cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

1 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tbsp olive oil

Juice of half a lemon

Salt to taste

For the Bowl Assembly:

2 cups cooked quinoa or rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 red onion, thinly sliced

1 cup kalamata olives, pitted and halved

Fresh parsley for garnish

Feta cheese for topping (optional)

Marinate the Chicken:

    In a large bowl, mix together olive oil, minced garlic, lemon juice, oregano, cumin, paprika, salt, and pepper. Add in the chicken thighs, ensuring they are well-coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to 4 hours for best flavor).

      Prepare the Tzatziki Sauce:

        In a medium bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, olive oil, lemon juice, and salt. Mix well, then refrigerate for at least 15 minutes to allow the flavors to meld.

          Cook the Chicken:

            Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-8 minutes per side, or until the chicken is cooked through and has nice grill marks. Use a meat thermometer to check for an internal temperature of 165°F (75°C). Once done, let the chicken rest for 5 minutes, then slice it into strips.

              Assemble the Bowls:

                In serving bowls, start with a base of cooked quinoa or rice. Top with sliced chicken, cherry tomatoes, diced cucumber, red onion, kalamata olives, and a generous dollop of tzatziki sauce. Sprinkle with fresh parsley and crumble feta cheese on top if desired.
