Ingredients

2 cups cooked chicken, shredded

1 cup cream cheese, softened

1/2 cup green chili peppers, diced (canned or roasted)

1/2 cup sharp cheddar cheese, shredded

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon cumin

Salt and pepper to taste

4 large flour tortillas

Fresh cilantro, for garnish (optional)

Instructions

In a large mixing bowl, combine the shredded chicken, cream cheese, diced green chili peppers, sharp cheddar cheese, green onions, garlic powder, cumin, salt, and pepper. Mix until all ingredients are well incorporated and smooth.

Lay out one flour tortilla on a flat surface or cutting board. Spread a generous layer of the chicken mixture evenly over the entire tortilla, leaving a small border around the edges.

Starting from one edge, carefully roll the tortilla tightly into a log shape, ensuring the filling stays inside. Repeat this process with the remaining tortillas and filling.

Once rolled, wrap each pinwheel log in plastic wrap or parchment paper to hold its shape. Chill in the refrigerator for at least 30 minutes to make slicing easier.

When ready to serve, remove the pinwheel logs from the refrigerator and unwrap. Using a sharp knife, slice each log into 1-inch thick pieces to create bite-sized pinwheels.

Arrange the pinwheels on a platter and garnish with fresh cilantro if desired. Serve immediately for a delicious appetizer or snack!
