Grilled BBQ Chicken Pizza

For the pizza dough:

2 cups all-purpose flour

1 packet (2 ¼ teaspoons) active dry yeast

¾ cup warm water (about 110°F)

1 tablespoon sugar

1 teaspoon salt

1 tablespoon olive oil

For the top:

1 cup cooked chicken, shredded (grilled or rotisserie)

½ cup BBQ sauce (plus extra for drizzling)

1 cup shredded mozzarella cheese

½ cup red onion, thinly sliced

½ cup cheddar cheese, shredded

¼ cup fresh cilantro, chopped (for garnish)

Instructions
 

Prepare the Dough: In a small bowl, combine the warm water, sugar, and yeast. Let it sit for about 5-10 minutes, until frothy. In a large mixing bowl, mix the flour and salt together. Add the yeast mixture and olive oil into the flour mixture. Combine until a dough forms.

    Knead the Dough: Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover it with a towel, and let it rise in a warm place for about 1 hour or until it doubles in size.

      Pre-heat the Grill: Preheat your grill to medium-high heat (about 400°F). If using a charcoal grill, ensure that the coals are well-lit.

        Prepare the Chicken: In a bowl, mix the shredded chicken with ½ cup of BBQ sauce until well coated.

          Roll Out the Dough: Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out to about ¼ inch thick and shape it into a circle or rectangle, depending on your grill surface.

            Grill the Dough: Carefully place the rolled-out dough onto the grill grates. Grill for about 3-5 minutes on one side until it starts to puff and get grill marks. Flip the dough over.
