Grilled Chicken Mango Tacos

For the Chicken Marinade:

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

Juice of 2 limes

1 tablespoon honey

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1/2 red bell pepper, diced

1 jalapeño, minced (optional)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For Serving:

8 small corn tortillas

1 avocado, sliced

Lime wedges

Extra cilantro for garnish

Marinate the Chicken: In a large bowl, whisk together olive oil, lime juice, honey, minced garlic, cumin, chili powder, salt, and pepper. Add the chicken thighs, making sure they are well coated in the marinade. Cover and let marinate in the fridge for at least 30 minutes (up to 2 hours for more flavor).

    Make the Mango Salsa: In a separate bowl, combine diced mango, red onion, red bell pepper, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.

      Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat and lightly oil the surface.

        Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Grill for about 5-7 minutes on each side, or until the chicken reaches an internal temperature of 165°F (75°C) and has nice grill marks. Allow to rest for 5 minutes before slicing.

          Warm the Tortillas: While the chicken is resting, warm the corn tortillas on the grill for about 30 seconds on each side until they are pliable and have a bit of char.

            Assemble the Tacos: Slice the grilled chicken into strips. Place a few strips of chicken onto each tortilla, top with a generous spoonful of mango salsa, add avocado slices, and garnish with extra cilantro.
