Grilled Chicken Pesto Wraps

2 boneless, skinless chicken breasts

1/2 cup basil pesto (store-bought or homemade)

4 large whole wheat tortillas

1 cup baby spinach

1 cup cherry tomatoes, halved

1/2 cup shredded mozzarella cheese

1/4 cup sun-dried tomatoes, chopped

Olive oil

Salt and pepper, to taste

Marinate the Chicken: In a bowl, season the chicken breasts with olive oil, salt, and pepper. Add half of the pesto and coat the chicken thoroughly. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes on each side or until fully cooked (internal temperature should reach 165°F/75°C). Remove from grill and let rest for 5 minutes before slicing.

      Prepare Wraps: Lay out the whole wheat tortillas flat on a clean surface. Spread a spoonful of the remaining pesto on each tortilla as a base.
