Ingredients

4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

Zest of 1 orange

Zest of 1 lemon

Juice of 1 orange

Juice of 1 lemon

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon black pepper

Fresh herbs for garnish (such as parsley or cilantro)

Instructions

Prepare the Marinade: In a large mixing bowl, combine olive oil, orange zest, lemon zest, orange juice, lemon juice, honey, minced garlic, smoked paprika, ground cumin, salt, and black pepper. Whisk until well combined.

Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over the chicken. Ensure that all pieces are well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

Preheat the Grill: When ready to cook, preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C). If you’re using a charcoal grill, ensure the coals are evenly spread out for consistent cooking.

Grill the Chicken: Remove the chicken thighs from the marinade, letting excess marinade drip off. Place the thighs skin-side down on the grill. Grill for about 6-8 minutes until the skin is crispy and has nice grill marks.

Flip and Cook: Carefully flip the chicken thighs over and grill for another 6-8 minutes until the internal temperature reaches 165°F (75°C) and the juices run clear. For extra moisture, you can brush some reserved marinade on the chicken during the last few minutes of grilling.

Rest and Serve: Remove the chicken from the grill and let it rest for about 5 minutes. Garnish with fresh herbs before serving. Enjoy your smoky citrus grilled chicken thighs with your favorite sides!
