Grilled Chicken & Watermelon Salad

2 boneless, skinless chicken breasts

4 cups watermelon, cubed

2 cups arugula or spinach

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup balsamic glaze

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Marinate the Chicken: In a bowl, combine olive oil, garlic powder, salt, and pepper. Add the chicken breasts and coat well. Let it marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

    Grill the Chicken: Preheat the grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Once cooked, remove from the grill and let it rest for 5 minutes before slicing.

      Prepare the Salad: In a large mixing bowl, combine the watermelon cubes, arugula or spinach, cherry tomatoes, red onion, and chopped mint leaves. Toss to mix everything evenly.
