Grilled Corn with Basil Butter

Ingredients
  

4 ears of fresh corn, husked

1/2 cup unsalted butter, softened

1/4 cup fresh basil leaves, finely chopped

1-2 cloves garlic, minced

Zest of 1 lemon

Juice of 1/2 lemon

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

Optional: Grated Parmesan cheese for serving

Prepare the Basil Butter: In a medium bowl, combine the softened butter, chopped basil, minced garlic, lemon zest, the juice of half a lemon, kosher salt, and black pepper. Mix well until all ingredients are integrated. Set aside.

    Preheat the Grill: Preheat your grill to medium-high heat (about 400°F or 200°C). If using charcoal, make sure the coals are ashed over and glowing white.

      Prep the Corn: While the grill is heating, husk the corn and remove all silk strands. Rinse the corn under cold water to clean. Pat dry with paper towels.

        Grill the Corn: Once the grill is hot, place the corn on the grill grates. Grill for about 10-12 minutes, turning occasionally until all sides are slightly charred and tender. The kernels should be plump and juicy.

          Add the Basil Butter: During the last few minutes of grilling, brush the basil butter generously over the corn, allowing it to melt and coat the corn for extra flavor. Reserve some butter for serving.

            Serve: Remove the grilled corn from the grill and place it on a serving platter. Drizzle any remaining basil butter over the corn and, if desired, sprinkle with grated Parmesan cheese for an added touch of richness.
