250g halloumi cheese, cut into cubes

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 zucchini, sliced into thick rounds

1 red onion, cut into wedges

8 cherry tomatoes

3 tablespoons olive oil

1 tablespoon lemon juice

2 teaspoons dried oregano

2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Skewers (wooden or metal)

Instructions
 

Marinate the Halloumi: In a bowl, whisk together olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper. Add the halloumi cubes and let them marinate for about 15-20 minutes.

    Prepare the Vegetables: While the halloumi is marinating, soak the wooden skewers in water for about 10 minutes (if using). This prevents them from burning on the grill.

      Assemble the Skewers: On each skewer, alternate threading the marinated halloumi, red bell pepper, yellow bell pepper, zucchini, red onion, and cherry tomatoes. Aim for a vibrant mix of colors for visual appeal.

        Preheat the Grill: Preheat your grill to medium-high heat. If using a grill pan, make sure it’s heated and lightly oiled to prevent sticking.

          Grill the Skewers: Place the assembled skewers on the grill. Cook for about 8-10 minutes, turning occasionally until the halloumi is golden brown and the veggies are tender with nice grill marks.

            Garnish and Serve: Once grilled, remove the skewers from heat and transfer to a serving platter. Garnish with freshly chopped parsley for an extra touch of flavor and color.
