2 slices of sourdough bread

1 cup fresh mozzarella cheese, sliced

1/2 cup sun-dried tomatoes, packed in oil, chopped

1/2 cup fresh basil leaves

2 tablespoons pesto sauce

1 tablespoon balsamic vinegar

Salt and pepper to taste

2 tablespoons olive oil (for grilling)

Optional: Red pepper flakes for a spicy kick

Prepare the Ingredients: Start by slicing the sourdough bread into thick slices. Place the fresh mozzarella, sun-dried tomatoes, and basil leaves on a clean work surface.

    Make the Assembly: Take one slice of sourdough and spread a layer of pesto sauce generously on one side. Layer the mozzarella slices on top followed by the chopped sun-dried tomatoes and fresh basil leaves. Drizzle the balsamic vinegar over the toppings and sprinkle with salt, pepper, and optional red pepper flakes.

      Top It Off: Place the second slice of sourdough on top, with the pesto side facing inwards towards the fillings.

        Prepare to Grill: Preheat a skillet or grill pan over medium heat. Once hot, add one tablespoon of olive oil to coat the surface.

          Grill the Sandwich: Carefully place the sandwich in the skillet. Grill for 3-4 minutes on one side until golden brown and crispy.

            Flip and Finish: Add the remaining tablespoon of olive oil around the edges of the sandwich, then carefully flip it over. Grill the other side for another 3-4 minutes until it’s equally golden brown and the cheese is melted.

              Serve: Once done, remove the sandwich from the skillet. Allow it to cool for a minute, then slice it in half. Serve warm, perhaps with a side of marinara sauce for dipping.
