Grilled Pita Bread Pizza

4 large whole wheat pita bread

1 cup marinara sauce or pizza sauce

1 ½ cups shredded mozzarella cheese

½ cup sliced black olives

1 cup cherry tomatoes, halved

1 small red onion, thinly sliced

1 cup fresh spinach leaves

1 teaspoon dried oregano

1 teaspoon garlic powder

1 tablespoon olive oil

Fresh basil leaves for garnish

Salt and pepper to taste

Preheat the Grill: Set your grill to medium-high heat (approximately 375°F/190°C). If using a charcoal grill, let the coals burn down until they are covered with white ash.

    Prepare the Pita Bases: Brush one side of each pita bread lightly with olive oil. This will help the pitas get crispy and flavorful when grilled.

      Build Your Pizza: Place the pitas (oiled side down) directly on the grill grates. Spread about 2-3 tablespoons of marinara sauce on each pita, leaving a small border around the edge.

        Add Toppings: Sprinkle shredded mozzarella cheese evenly over the sauce, then layer with sliced black olives, cherry tomatoes, red onion, and fresh spinach. Sprinkle a dash of salt, pepper, oregano, and garlic powder over the toppings.

          Grill the Pitas: Close the grill lid and cook for about 5-7 minutes, or until the cheese is melted and bubbly and the edges of the pita are crispy. Keep an eye on it to avoid burning.

            Serve: Carefully remove the grilled pita pizzas from the grill using tongs. Allow them to cool for a minute, then garnish with fresh basil leaves before slicing.
