For the Grilled Salmon:

4 salmon fillets (6 ounces each)

2 tablespoons olive oil

1 tablespoon lemon juice

2 cloves garlic, minced

1 teaspoon smoked paprika

Salt and pepper to taste

For the Peach Salsa:

2 ripe peaches, diced

1 small red onion, finely chopped

1 jalapeño, deseeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

Marinate the Salmon: In a small bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them, making sure each fillet is well coated. Cover and refrigerate for at least 30 minutes.

    Prepare the Peach Salsa: In a separate bowl, combine the diced peaches, chopped red onion, minced jalapeño, and cilantro. Squeeze the lime juice over the mixture and sprinkle with salt. Toss gently to combine. Allow the salsa to sit for at least 15 minutes to let the flavors meld.

      Preheat the Grill: Preheat your grill to medium-high heat. If you're using a grill pan, heat it on the stovetop over medium-high heat.

        Grill the Salmon: Remove the salmon from the marinade and shake off any excess. Place the fillets on the grill (skin-side down if applicable) and cook for about 4-5 minutes. Carefully flip and grill for another 3-4 minutes, or until cooked through and the fish flakes easily with a fork.

          Serve: Remove the salmon from the grill and let it rest for a couple of minutes. Top each fillet generously with the peach salsa.

            Garnish and Enjoy: Optional - garnish with additional cilantro and lime wedges. Serve the grilled salmon warm alongside your favorite sides, such as grilled vegetables or a fresh salad.
