Ingredients

4 slices of whole wheat bread

2 tablespoons unsalted butter, softened

4 slices of cheddar cheese

4 slices of smoked turkey or ham

2 tablespoons mayonnaise

2 teaspoons Dijon mustard

1 small apple, thinly sliced

A handful of fresh spinach or lettuce

Salt and pepper, to taste

Instructions

Prep the Ingredients: Start by laying out your ingredients. Spread mayonnaise and Dijon mustard evenly on two slices of bread.

Layer the Fillings: On the slices with sauce, layer one slice of cheese, followed by slices of turkey or ham, apple slices, spinach, and then top with another slice of cheese.

Top and Butter: Place the remaining slices of bread on top to form two sandwiches. Spread the softened butter generously on the outside of each sandwich.

Heat the Grill: Preheat a non-stick skillet or griddle over medium heat.

Grill the Sandwiches: Once hot, place the sandwiches in the skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted. Press down gently with a spatula for even grilling, but be careful not to squish them too much.

Season and Serve: Remove from the heat and sprinkle with a little salt and pepper. Let the sandwiches rest for a minute before slicing in half.

Dig In: Serve your Grilled School Lunch Sandwich Melt with a side of carrot sticks or your favorite chips for a delightful meal!
