Grilled Shrimp & Corn Tacos

1 lb large shrimp, peeled and deveined

2 cups fresh corn kernels (about 3-4 ears of corn)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, shredded

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Shrimp: In a medium bowl, combine the shrimp, olive oil, smoked paprika, chili powder, garlic powder, salt, and pepper. Toss to coat the shrimp evenly. Let them marinate for about 15-20 minutes.

    Prepare the Corn: If using fresh corn, grill the corn on high heat, turning occasionally until it's nicely charred (about 10 minutes). Let it cool slightly, then cut the kernels off the cob. If using frozen corn, thaw and sauté in a skillet with a pinch of salt until heated through.

      Grill the Shrimp: Preheat your grill to medium-high heat. Thread the marinated shrimp onto skewers for easy grilling. Grill the shrimp for about 2-3 minutes per side, or until they are opaque and slightly charred.

        Warm the Tortillas: While the shrimp are grilling, wrap the corn tortillas in aluminum foil and place them on the grill or in a warm skillet for about 1-2 minutes, or until heated through.

          Assemble the Tacos: Lay a warm tortilla on a plate, add a generous scoop of corn kernels, followed by a few grilled shrimp. Top with shredded red cabbage, a couple of slices of avocado, and a sprinkle of fresh cilantro.
