Ingredients

1.5 pounds beef tenderloin, trimmed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh dill sprigs for garnish

For the Creamy Dill Sauce:

1 cup sour cream

1 tablespoon Dijon mustard

2 tablespoons fresh dill, chopped

1 tablespoon lemon juice

Salt and pepper to taste

Instructions

Prepare the Marinade: In a small bowl, mix together olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.

Marinate the Tenderloin: Rub the marinade all over the beef tenderloin. Cover and refrigerate for at least 1 hour, preferably overnight for deeper flavor.

Preheat the Grill: Preheat your grill to medium-high heat (around 400°F or 200°C).

Make the Creamy Dill Sauce: In a separate bowl, combine sour cream, Dijon mustard, chopped dill, lemon juice, and a pinch of salt and pepper. Mix well and set aside for flavors to meld.

Grill the Tenderloin: Remove the tenderloin from the refrigerator and let it rest for about 15 minutes at room temperature. Place the beef on the grill and sear each side for about 4-5 minutes until it reaches your desired doneness (145°F for medium-rare).

Rest the Meat: Once cooked, remove the tenderloin from the grill and tent it with foil. Let it rest for at least 10 minutes to retain its juices.

Serve: Slice the tenderloin into medallions. Drizzle the creamy dill sauce over the top and garnish with fresh dill sprigs for a vibrant finish.
