Grilled Teriyaki Chicken Skewers

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch pieces

½ cup soy sauce (low sodium recommended)

¼ cup brown sugar, packed

2 tablespoons rice vinegar

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons cold water (for thickening)

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1 medium onion, cut into wedges

8-10 skewers (soak in water for 30 minutes if using wooden skewers)

Sesame seeds and chopped green onions (for garnish)

Instructions
 

Marinate the Chicken: In a medium bowl, combine soy sauce, brown sugar, rice vinegar, honey, minced garlic, ginger, and sesame oil. Whisk until the sugar dissolves. Add the chicken pieces, making sure they are fully submerged. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.

    Prepare the Sauce: In a small saucepan over medium heat, bring the marinade to a simmer. Add the cornstarch mixture while stirring constantly. Continue to cook for 2-3 minutes, until the sauce thickens slightly. Remove from heat and let it cool.

      Assemble the Skewers: Thread the marinated chicken pieces onto the skewers, alternating with pieces of red bell pepper, green bell pepper, and onion. Leave a small space between the pieces to ensure even cooking.

        Grill the Skewers: Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 5-7 minutes per side, basting with the thickened teriyaki sauce, until the chicken is cooked through and has a nice char.

          Serve: Once fully cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish with sesame seeds and chopped green onions. Serve the skewers with additional teriyaki sauce on the side for dipping.
