Grilled Veggie & Hummus Wraps

Ingredients
  

4 large whole wheat wraps or tortillas

1 medium zucchini, sliced into thin rounds

1 red bell pepper, julienned

1 yellow bell pepper, julienned

1 medium red onion, sliced into rings

1 cup cherry tomatoes, halved

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 cup hummus (store-bought or homemade)

1 cup fresh spinach or arugula

Optional: Feta cheese or crumbled goat cheese for garnish

Instructions
 

Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it over medium heat on the stovetop.

    Prepare the Vegetables: In a large bowl, combine the zucchini, bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil, and season with salt, pepper, garlic powder, and smoked paprika. Toss until the veggies are well-coated.

      Grill the Veggies: Place the seasoned vegetables on the grill or grill pan in a single layer. Grill for about 5-7 minutes, turning occasionally, until they're tender and slightly charred. Remove them from the heat and let them cool for a couple of minutes.

        Assemble the Wraps: Lay out the whole wheat wraps on a clean surface. Spread a generous layer of hummus over each wrap, leaving about an inch border around the edges.

          Add the Veggies: Layer the grilled veggies evenly over the hummus, followed by a handful of fresh spinach or arugula.
