1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

1 red onion, cut into wedges

8 oz cherry tomatoes

1 cup mushrooms, whole or halved if large

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.

    Mix the Marinade: In a small bowl, whisk together olive oil, balsamic vinegar, honey, minced garlic, dried oregano, salt, and pepper. Set aside a portion of the marinade (about 2 tablespoons) for drizzling later.

      Chop the Veggies: In a large mixing bowl, combine the red bell pepper, yellow bell pepper, zucchini, red onion, cherry tomatoes, and mushrooms.
