Grilled Zucchini Boats Stuffed with Turkey Sausage

4 medium zucchinis, halved lengthwise

1 pound turkey sausage (mild or spicy, based on preference)

1 cup bell peppers, diced (red and yellow for color)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon crushed red pepper flakes (optional, for spice)

1 cup marinara sauce

1 cup shredded mozzarella cheese

Olive oil, for brushing

Salt and pepper, to taste

Fresh basil, for garnish

Instructions
 

Preheat the Grill: Preheat your grill to medium heat (about 350°F/175°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise. Using a spoon, scoop out a little of the flesh from the center to create a 'boat' (you can chop and reserve the scooped flesh for stuffing). Brush the zucchini halves with olive oil and season with salt and pepper.

      Cook the Turkey Sausage: In a skillet over medium heat, add the turkey sausage. Use a wooden spoon to break it up as it cooks. Once browned (about 5-7 minutes), add the diced bell peppers, chopped onion, and minced garlic. Sauté for another 3-4 minutes until the vegetables are softened.

        Mix the Filling: Stir in the reserved zucchini flesh, Italian seasoning, crushed red pepper flakes (if using), and marinara sauce. Allow it to simmer for 2-3 minutes until heated through. Remove from heat and fold in half of the shredded mozzarella cheese.

          Stuff the Zucchini: Place the zucchini halves on the grill. Fill each half with the turkey sausage mixture, packing it in well. Top each filled zucchini with the remaining mozzarella cheese.

            Grill the Zucchini Boats: Close the grill lid and cook for 12-15 minutes, until the zucchini is tender and the cheese is bubbly and golden.

              Garnish and Serve: Remove from the grill, garnish with fresh basil, and let cool slightly before serving.
