Before you begin the process of blending your ingredients, it’s important to prepare your dates properly. Hard dates can be challenging to blend into a smooth mixture, which is why soaking them is essential. Soak your pitted dates in warm water for about 10 to 15 minutes. This not only softens the dates but also helps to enhance their natural sweetness, making your choco date balls even more delicious.

Ingredients

1 cup Medjool dates, pitted

1 cup raw almonds or walnuts

1/4 cup unsweetened cocoa powder

1/4 cup nut butter (almond, cashew, or peanut)

1/4 cup rolled oats (gluten-free if needed)

1 tsp vanilla extract

1/2 tsp sea salt

2-3 tbsp water (as needed)

Optional toppings: shredded coconut, crushed nuts, or cocoa powder for rolling

Instructions

Prepare the Ingredients: Start by making sure the Medjool dates are pitted. If they are a bit hard, soak them in warm water for about 10 minutes, then drain.

Blend the Base: In a food processor, combine the pitted dates, raw almonds or walnuts, cocoa powder, nut butter, rolled oats, vanilla extract, and sea salt. Blend until the mixture is crumbly but starts to stick together. Scrape down the sides of the processor as needed.

Adjust Consistency: If the mixture is too dry and not forming a ball, gradually add water, one tablespoon at a time, until you achieve a dough-like consistency that can hold together when pressed.

Shape the Balls: Scoop out about a tablespoon of the mixture and roll it between your palms to form a smooth ball. Repeat until all the mixture is rolled into balls.

Add Toppings: If desired, roll each ball in your choice of shredded coconut, crushed nuts, or additional cocoa powder to add extra flavor and visual appeal.

Chill and Serve: Place the finished choco date balls in the fridge for about 30 minutes to firm up, making them easier to handle. Serve chilled or at room temperature.
