500g chicken breast, diced

1 can (400g) pineapple chunks in juice, drained (reserve juice)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, chopped

3 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Fresh parsley, for garnish (optional)

Steamed white rice or jasmine rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the diced chicken breast with the soy sauce, honey, minced garlic, and grated ginger. Allow it to marinate for at least 30 minutes in the refrigerator.

    Sauté Vegetables: In a large skillet or wok, heat the olive oil over medium heat. Add the chopped onion and sliced bell peppers, stirring occasionally until softened, about 5-7 minutes.

      Cook the Chicken: Add the marinated chicken to the skillet, cooking until it's browned and cooked through, approximately 7-10 minutes.

        Add Pineapple: Stir in the pineapple chunks and reserved pineapple juice. Let the mixture simmer for another 5 minutes, allowing the flavors to meld.
