1 cup cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 cup buttermilk (or regular milk with 1 tablespoon vinegar)

2 large eggs

¼ cup unsalted butter, melted

1 cup shredded sharp cheddar cheese

1 cup roasted Hatch green chilies, chopped (fresh or canned)

½ cup corn kernels (fresh or frozen)

1 teaspoon cumin

Optional: diced jalapeños for extra heat

Preheat Oven: Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish or cast-iron skillet with butter or cooking spray.

    Combine Dry Ingredients: In a large mixing bowl, whisk together cornmeal, flour, baking powder, baking soda, cumin, and salt until well combined.

      Mix Wet Ingredients: In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.

        Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

          Add Cheese and Chilies: Fold in the shredded cheddar cheese, roasted Hatch green chilies, and corn kernels. If you like it spicy, add diced jalapeños at this stage.

            Transfer to Dish: Pour the batter into the prepared baking dish or skillet, spreading it evenly.
