6 large eggs

1 cup shredded cheddar cheese

½ cup diced Hatch green chiles (fresh or canned)

½ cup diced red bell pepper

¼ cup diced onion

½ teaspoon garlic powder

½ teaspoon cumin

Salt and pepper to taste

8 small flour tortillas (fajita size)

Olive oil spray (for greasing)

Optional toppings: sour cream, salsa, avocado, cilantro

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin with olive oil spray.

    Prepare the Egg Mixture: In a large mixing bowl, crack the eggs and whisk them until well combined. Stir in the shredded cheddar cheese, diced Hatch green chiles, red bell pepper, onion, garlic powder, cumin, salt, and pepper. Mix until all ingredients are evenly distributed.
