Hatch Chili Veggie Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1-2 Hatch green chilies, roasted, peeled, and chopped

1/4 cup sautéed bell peppers (any color)

1/4 cup sautéed mushrooms

1 tablespoon butter (for grilling)

1 teaspoon onion powder

Salt and pepper to taste

Optional: fresh cilantro, for garnish

Prepare the Veggies: In a skillet over medium heat, sauté the bell peppers and mushrooms until soft, about 5-7 minutes. Season with onion powder, salt, and pepper. Remove from heat.

    Mix the Cheese: In a mixing bowl, combine the shredded cheddar cheese, Monterey Jack cheese, chopped Hatch green chilies, and the sautéed vegetables. Stir well until all ingredients are evenly mixed.

      Assemble the Sandwich: Spread a thin layer of butter on one side of each slice of sourdough bread. On the unbuttered side of one slice, pile on the cheese and veggie mixture, spreading it out evenly. Top with the second slice of bread, buttered side up.

        Grill the Sandwich: Heat a skillet over medium heat. Once hot, carefully place the sandwich in the skillet. Cook for about 3-4 minutes or until the bread is golden brown and crispy. Flip the sandwich and reduce the heat to low to allow the cheese to melt, cooking another 3-4 minutes.

          Check for Doneness: Once both sides are golden and the cheese is gooey, remove the sandwich from the skillet. Let it sit for a minute before slicing.
