Ingredients

2 ripe bananas, mashed

1 cup whole wheat flour

1/2 cup old-fashioned oats

1/4 cup honey or maple syrup

1/4 cup Greek yogurt (plain, unsweetened)

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans

1/4 cup dark chocolate chips (optional)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or grease it lightly with cooking spray.

Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, honey or maple syrup, Greek yogurt, egg, and vanilla extract. Mix well until everything is nicely blended.

Mix Dry Ingredients: In a separate bowl, whisk together the whole wheat flour, oats, baking soda, baking powder, cinnamon, and salt.

Combine Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Be careful not to over-mix.

Add Nuts and Optional Ingredients: Fold in the chopped walnuts or pecans and dark chocolate chips if using. Ensure they're evenly distributed throughout the batter.

Fill Muffin Tin: Spoon the batter into the prepared mini muffin tin, filling each cup about 3/4 full.

Bake: Place the muffin tin in the oven and bake for about 12-15 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

Cool Down: Once done, remove the muffin tin from the oven and allow the muffin bites to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Serve & Enjoy: Enjoy these banana nut muffin bites as a healthy snack or breakfast treat. They can be stored in an airtight container for up to a week or frozen for longer storage.
