1 medium zucchini, grated (about 1 cup)

1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1 tsp baking soda

1/2 tsp baking powder

1/4 tsp salt

1/2 cup coconut sugar (or brown sugar)

1/4 cup honey or maple syrup

1/3 cup unsweetened applesauce

1/4 cup Greek yogurt (plain)

2 large eggs

1 tsp vanilla extract

1/2 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with cooking spray.

    Prepare the Zucchini: Grate the zucchini using a box grater or food processor. If it's very watery, squeeze out excess moisture using a clean kitchen towel or cheesecloth.

      Mix Dry Ingredients: In a large bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, and salt until evenly combined.

        Combine Wet Ingredients: In another bowl, beat together the coconut sugar, honey (or maple syrup), applesauce, Greek yogurt, eggs, and vanilla extract until smooth.
