8 large egg whites

1 cup spinach, chopped

½ cup bell peppers, diced (any color)

¼ cup red onion, finely chopped

½ cup cherry tomatoes, halved

¼ cup feta cheese, crumbled (optional for a boost of flavor)

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Cooking spray or olive oil (for greasing)

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a silicone muffin tray or a standard muffin tray with cooking spray or a brush of olive oil.

    Mix Ingredients: In a large mixing bowl, combine the egg whites, chopped spinach, diced bell peppers, red onion, cherry tomatoes, and feta cheese (if using). Add garlic powder, paprika, salt, and pepper. Stir well until all the ingredients are evenly mixed.
