4 medium zucchini, sliced into half-moons

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1/2 lemon

Prepare the Zucchini: Wash and slice the zucchini into half-moons, about ½ inch thick. This will help them cook evenly.

    Heat the Oil: In a large skillet, heat the olive oil over medium heat. Ensure the oil is hot but not smoking, about 2 minutes.
