2 cups rolled oats

1 cup whole wheat flour

1/2 cup almond butter (or any nut butter of choice)

1/3 cup pure maple syrup (or honey)

1 ripe banana, mashed

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 1/2 cups fresh strawberries, hulled and sliced

Optional: 1/4 cup chopped nuts (e.g. walnuts or almonds) for added crunch

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Stir to ensure that all the dry ingredients are evenly distributed.

      Mix Wet Ingredients: In another bowl, mix together the almond butter, maple syrup, mashed banana, applesauce, and vanilla extract until well combined. This mix should be smooth and creamy.

        Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Stir until just combined. If you’re adding nuts, fold them in at this stage.

          Layer the Batter: Transfer half of the oatmeal mixture into the prepared baking pan and press it firmly into an even layer. This will be the base of your bars.

            Add Strawberries: Carefully arrange the sliced strawberries on top of the base layer, spreading them out evenly.

              Top with Remaining Mixture: Spread the remaining oatmeal mixture over the strawberries, making sure to cover them as best as you can. Gently press down on the top layer.

                Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted comes out clean.

                  Cool and Cut: Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment overhang to lift the bars out. Allow them to cool completely on a wire rack before slicing into bars.

                    Serve and Enjoy: Once cooled, cut into squares or rectangles and serve as a healthy snack or breakfast option.
