1 cup green or brown lentils, rinsed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

4 cups vegetable broth

1 can (14.5 oz) diced tomatoes, undrained

2 cups kale, chopped (optional)

Juice of 1 lemon

Fresh parsley, chopped for garnish

For the Warm Bread:

4 store-bought whole grain rolls or baguette

2 tablespoons unsalted butter, melted

1 teaspoon garlic powder

Fresh herbs (such as rosemary or thyme) for sprinkling

Prepare the lentils: Rinse the lentils under cold water and set aside.

    Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in garlic, carrots, and celery. Sauté for another 5-7 minutes until the vegetables start to soften.

      Season the mixture: Add the cumin, smoked paprika, thyme, salt, and black pepper to the pot. Stir for about 1 minute to release the flavors.

        Add lentils and broth: Pour in the rinsed lentils, vegetable broth, and diced tomatoes (with their juice). Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 25-30 minutes, or until lentils are tender.

          Incorporate greens and finish: If using kale, stir it into the soup during the last 5 minutes of cooking. Remove from heat and add lemon juice for brightness. Adjust seasoning if necessary.
