Hearty Turkey and Sweet Potato Chili

1 lb ground turkey

2 medium sweet potatoes, diced

1 large onion, chopped

4 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14 oz) diced tomatoes, undrained

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

2 cups chicken broth

2 tbsp olive oil

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

Salt and pepper to taste

Fresh cilantro, for garnish

Avocado slices, for garnish (optional)

Shredded cheese, for serving (optional)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper, cooking until they soften, about 5 minutes.

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the ground turkey to the pot, breaking it up with a spatula. Cook until it's browned and fully cooked, about 5-7 minutes.

        Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir to evenly coat the turkey and vegetables with the spices.

          Add the diced sweet potatoes to the pot, followed by the diced tomatoes (with their juice), black beans, kidney beans, and chicken broth. Stir well to combine.

            Bring the chili to a boil, then reduce the heat to low. Cover and simmer for about 30-40 minutes, or until the sweet potatoes are tender and the flavors meld together.

              Taste and adjust seasoning if necessary. For a thicker chili, you can simmer uncovered for an additional 10-15 minutes.

                Serve hot, garnished with fresh cilantro and avocado slices, and top with shredded cheese if desired.
