Ingredients

1 pound beef stew meat, cut into 1-inch cubes

2 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 ribs celery, diced

1 large potato, cubed

1 cup green beans, trimmed and cut into 1-inch pieces

1 can (14.5 oz) diced tomatoes (with juice)

6 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper to taste

1 cup frozen peas

Fresh parsley, chopped for garnish

Instructions

Sear the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and sear on all sides until browned, about 5-7 minutes. Remove the beef and set aside.

Sauté Aromatics: In the same pot, add the diced onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.

Add Vegetables: Add the sliced carrots, diced celery, and cubed potatoes to the pot. Cook for another 5 minutes, stirring occasionally.

Combine Ingredients: Return the browned beef to the pot. Add the diced tomatoes with their juice, beef broth, green beans, thyme, oregano, and bay leaf. Stir everything to combine.

Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 1.5 to 2 hours, or until the beef is tender. Stir occasionally and add water if the soup gets too thick.

Final Touches: Once the beef is tender, add the frozen peas and cook for another 5 minutes. Taste and season with salt and pepper as needed.

Serve: Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh chopped parsley. Enjoy this hearty soup warm, perfect for cozy nights!
