Herbed Feta Stuffed Peppers

4 large bell peppers (red, yellow, or orange for sweetness)

200g (about 7 oz) feta cheese, crumbled

1 cup cooked quinoa (or couscous)

1/2 cup cherry tomatoes, finely chopped

1/4 cup black olives, pitted and chopped

1/2 cup fresh parsley, chopped

1/2 cup fresh basil, chopped

2 cloves garlic, minced

1 tsp dried oregano

1 tsp lemon zest

2 tbsp olive oil

Salt and pepper, to taste

Optional: 1/4 cup pine nuts, toasted

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. Lightly drizzle the outside of the peppers with olive oil and season with salt and pepper. Place them upright in a baking dish.

      Make the Filling: In a large mixing bowl, combine the crumbled feta cheese, cooked quinoa, cherry tomatoes, black olives, parsley, basil, garlic, oregano, lemon zest, and olive oil. Mix well until all ingredients are evenly incorporated. Season with additional salt and pepper if desired.

        Stuff the Peppers: Carefully fill each bell pepper with the herbed feta mixture, packing it in gently but firmly. If you like an extra crunch, sprinkle the toasted pine nuts on top of the filling before capping them with the pepper tops.

          Bake: Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes or until the peppers are tender and the tops are slightly golden.

            Serve: Remove from the oven and let cool for 5 minutes before serving. These stuffed peppers are delightful on their own or served with a side salad.
