2 large zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tablespoon fresh basil, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

Salt and pepper to taste

2 cups marinara sauce

Olive oil for drizzling

Fresh basil leaves for garnish

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips (about 1/4 inch thick) using a mandoline or sharp knife. Lay the strips on a baking sheet lined with paper towels, sprinkle with salt, and let sit for about 20 minutes to draw out moisture. Pat the strips dry with a paper towel.

    Make the Filling: In a bowl, combine the ricotta cheese, half of the mozzarella, Parmesan cheese, egg, minced garlic, fresh basil, parsley, dried oregano, salt, and pepper. Mix well until everything is thoroughly combined.

      Assemble the Rollatini: Take a zucchini strip and place 1-2 tablespoons of the ricotta mixture at one end. Roll the zucchini up gently and place it seam-side down in a greased baking dish. Repeat with the remaining zucchini strips and filling until the dish is filled, fitting them snugly together.

        Add the Sauce: Pour the marinara sauce evenly over the zucchini rollatini, ensuring each rollatini is well covered. Top with the remaining mozzarella cheese and drizzle lightly with olive oil.
