Herbed Ricotta Zucchini Toast

2 medium zucchini, sliced into 1/4-inch thick rounds

1 cup ricotta cheese

2 tablespoons fresh basil, finely chopped

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper, to taste

4 slices of thick rustic bread (such as sourdough or ciabatta)

2 tablespoons olive oil, plus more for drizzling

Pinch of red pepper flakes (optional)

Fresh microgreens or arugula, for garnish

Instructions
 

Prepare the Zucchini:

    - Preheat your grill or grill pan over medium heat.

      - Toss the sliced zucchini with 1 tablespoon of olive oil, salt, and pepper.

        - Grill the zucchini for about 2-3 minutes per side until grill marks form and the zucchini is tender. Remove from the heat and set aside.

          Make the Herbed Ricotta:

            - In a medium bowl, combine the ricotta cheese, chopped basil, parsley, chives, lemon juice, lemon zest, salt, and pepper to taste. Mix well until smooth and creamy.

              Toast the Bread:

                - In the same grill pan, add the bread slices and grill for about 2-3 minutes on each side until golden brown and crispy. You can also toast them in a toaster or oven if preferred.

                  Assemble the Toast:

                    - Spread a generous layer of the herbed ricotta mixture on each slice of toasted bread.
